<p>We are officially up and running.  The eblast has hit the Internet and we already have had a few donors so THANK YOU! to all that have already donated. </p>
<p>Today is also #charitiytuesday on twitter.  We have been participating in that by posting what each donation buys for our clients.  $25 provides art supplies for 1 group session for children in residence at one of our programs.  $100 provides a client with eyeglasses through Assisted Housing and Health. </p>
<p>After talking with a few friends we have some really great Hosts nailed down for REDHOUSE.  <strong>Angela Crawford</strong>in Pleasant Hill is going to be hosting with <strong>Jenny Budke</strong> and Me!   <strong>Kristen Hickey</strong>is going to be hosting in San Francisco with <strong>Lindsey Boyer</strong>.  <strong>Maria Sullivan</strong>is going to be hosting at a club in San Francisco TBD.  <strong>Patricia Glasser</strong>will host in Daly City.  <strong>Doug Hickey</strong>is hosting the REDHOUSE kick off party on June 11th.</p>

			<content:encoded><![CDATA[<p align="center"><strong>BAKED CHICKEN BREAST WITH CORNMEAL CRUST</strong></p>

<p>¾ CUP MILK<br />
¾ CUP LEMON JUICE<br />
2 TABLESPOON GRATED LEMON ZEST<br />
¼ CUP OLIVE OIL<br />
2 TABLESPOONS FINELY MINCED SHALLOTS<br />
1 TABLESPOON COARSE SALT<br />
1 TABLESP     OOM CHILI POWDER<br />
4 SKINLESS/BONELESS CHICKEN BREASTS<br />
½ CUP CORNMEAL<br />
½ CUP PANKO<br />
2/3 CUP FRESHLY GRATED PARMIGIANO-REGGIANO CHEESE<br />
3 TABLESPOONS MINCED ITALIAN PARSLEY<br />
2 EGGS BEATED WITH 2 TABLESPOONS WATER<br />
2 TABLESPOONS MELTED BUTTER</p>
<p>In a medium bowl whisk together, lemon juice, milk, 2 teaspoons of the lemon zest, olive oil, shallots, 2 teaspoons of the salt and 2 teaspoons of the chili powder.  Add the chicken, turn to coat and marinate in refrigerator for 5 hours.</p>
<p>In a separate bowl combine, the cornmeal, Panko, or dried breadcrumbs, cheese, parsley, remaining lemon zest, salt and chili powder.</p>
<p>Remove chicken from marinade and drain briefly.  Coat the chicken breast in the egg mixture and dredge in the cornmeal mixture, patting to coat.  This can be prepared 3 hours in advance. Place on cookie sheet and put in the refrigerator, uncovered.</p>
<p>Preheat oven to 425 degrees.  On a lightly coated baking pan arrange the chicken.  Drizzle with the butter. Bake for 35 minutes or until crisp and golden.</p>
<p>Transfer to paper towels to drain.  Can be served warm or at room temperature.<br />
Serves 4</p>

<p>7 eggs<br />
1 ¼ cups milk<br />
1 ¼ cps half and half<br />
½ cup sugar<br />
2 tsp. vanilla extract<br />
¼ tsp ground nutmeg<br />
2 baguettes, ends trimmed, sliced and dried (10 oz ea)  Cut into sliced pieces like you would for garlic bread</p>
<p><strong><em>For the Streusel</em></strong></p>
<p>½ cup all purpose flour<br />
¼ cup sugar<br />
1/8 tsp salt<br />
3 tbsp unsalted butter, melted<br />
¼ cup sliced almonds<br />
½ tsp almond extract</p>
<p><strong><em>For the Syrup</em></strong></p>
<p>½ cup apricot preserves<br />
½ cup pure maple syrup<br />
½ tsp lemon juice</p>
<p><strong><em>Directions</em></strong></p>
<p>Coat a 13&#215;9 inch glass or ceramic baking dish with nonstick spray</p>
<p>Whish eggs, milk, half and half, ½ cup sugar, vanilla, and nutmeg for the French toast in a large bowl.</p>
<p>Toss the baguette pieces in egg mixture and let stand 5 minutes to absorb some of the custard. Arrange the baguette pieces in the prepared baking dish, flat side down. Pour residual custard over bread. Cover with plastic for 2 to 24 hours.</p>
<p>Preheat oven to 375</p>
<p>Combine all ingredients for the streusel in a bowl, then sprinkle over baguettes. Bake until topping is golden and bread is set, about 30 min.</p>
<p>Simmer preserves and syrup together in a saucepan over medium-low heat until preserves melt; stir in lemon juice. Serve warm with French toast.</p>
<p><strong><em>VARIATION</em><br />
</strong>I used Panettone bread and Ciabatta bread.<br />
I also added orange juice to the liquid mixture. You have to back off the milk or half and half and balance with OJ. For example, it calls for a 1 ¼ cups of milk. I used ¾ cup milk and the rest OJ. Works fine. I don’t know if you can substitute OJ completely.</p>
<p>I also added fresh orange zest to it.</p>
<p>The first time I made it I did not do the streusel or the syrup. I just made it as is and put a little powdered sugar on top. YUMMY! Great for a big breakfast.</p>

<p><strong><span style="text-decoration:underline;">Ingredients </span></strong></p>
<ul>
<li><strong>1 Pork Tenderloin</strong>  (when you go to the supermarket, find the butcher section and look for pork products.  The pork tenderloin should be there packaged individually and will probably be between $10.00 and $14.00 depending on the weight. )</li>
<li><strong>1/2 can whole cranberries</strong></li>
<li><strong>1 pinch of rosemary ground up</strong></li>
<li><strong>butter</strong></li>
<li><strong>1/2 chopped onion</strong></li>
<li><strong>1/2 can of chicken broth</strong></li>
<li><strong>1 tbsp balsamic vinegar</strong></li>
<li><strong>salt &amp; pepper</strong></li>
</ul>
<p>Clean the pork tenderloin, but try and keep some of the fat on it.  Slather both with the butter and salt &amp; pepper.  Put it in the oven at 450 degrees.  You want to brown it on all sides so try and flip it every 5 &#8211; 10 minutes.  The center of the pork should be 155 degrees or slightly pink.</p>
<p>On the stove, add 1tbsp of butter and the onions to a pan and sauté.  Add rosemary and continue stirring.  Add broth, cranberries, and vinegar.  Whisk until the cranberry sauce melts (about 2 minutes).</p>
<p>Once the pork is done, move it to a work surface and take whatever drippings are left in the pan and add them to the cranberry sauce.   Boil the sauce until it coats a spoon thickly.</p>
<p>Slice the pork and serve with the sauce.</p>

<p class="lede">At the outbreak of the AIDS epidemic over 20 years ago, the <a href="http://www.cccyo.org/programs/hiv.php">Assisted Housing &amp; Health Services </a>of Catholic Charities CYO was one of the first organizations to respond. Since then, our services have grown and evolved to continue to meet the ever-changing face of the epidemic.</p>
<p class="lede">Today, we serve more than <strong>1,300</strong> people living with <a href="http://www.cccyo.org/programs/hiv.php">HIV</a>, annually. Our total number of clients over the years is 6,000—25% of all San Franciscans who&#8217;ve been disabled by the disease. &#8220;Catholic Charities CYO helped me choose life,&#8221; says one client.</p>
<p class="subpage"><span class="heading3"><strong>Peter Claver Community</strong></span><br />
This 32-bed licensed medical residential care community serves formerly homeless men and women who are living with disabling HIV/AIDS, many of whom also struggle with major psychiatric disorders and substance abuse. <a href="http://www.cccyo.org/programs/hiv.pp">www.cccyo.org/programs/hiv.pp</a></p>
<p class="subpage"><span class="heading3"><strong>Leland House</strong></span><br />
Leland House is a permanent/supportive housing program for 45 people living with disabling HIV/AIDS, psychiatric disorders and substance abuse issues. 10 beds of the 45 are available for those who require assisted living and/or assistance with activities of daily living and are homeless. Residents for these 10 beds can be referred directly and quickly from hospitals, shelters, SROs and agencies working with the homeless.</p>
<p class="subpage">Leland House is a residential care community that provides nursing and social work case management as well as a staff of certified nursing assistants to help with activities of daily life, a full kitchen staff that provides three meals a day and an activities coordinator to help improve and sustain quality of life. <a href="http://www.cccyo.org/programs/hiv.pp">www.cccyo.org/programs/hiv.pp</a></p>

<p class="subpage"><span class="heading3"><strong>Assisted Housing &amp; Health Programs</strong>.</span><br />
We help by providing more than 237,250 nights of housing annually through the full and partial rent subsidy programs. The program also provides case management, money management and housing advocacy services.
